I went surveying variations on this, and eventually tried this composite: toss zucchini with olive oil, salt, Italian seasoning, then sear in a wide skillet. I’m not completely unhappy with the results, although the spices took over almost completely.
The fascinating aspect is, I can see it getting somewhere just by making adjustments to the spice mix. Oh, and one variation, added garlic after the fact, which is also something I might try.
