A little late to the conversation, but if you are primarily concerned with protecting your personal data and disabling tracking, you should disable Cortana as well as the automatic Bing search: https://endurtech.com/how-to-turn-off-and-disable-microsofts-cortana/
UAC is good and doesn’t interfere like it did in earlier windows OS’. Exception being if you are using programs that write to the program files(x86) folder (and really you should configure those programs so they don’t or avoid them altogether).
Anti-virus companies are a mess these days and you basically have to look up who controls the company. Kaspersky for example, is closely linked to the Russian government, which probably isn’t particularly interested in your personal information but definitely has access if it wants. Googling Bit-Defender, it is owned by a Romanian and an East-European private equity fund.
Honesty Microsoft’s AV is as good or better than all the others, and at least you know where your information is going.
