What I get as being part of an audience is that interesting is a notion that is mostly manufactured through good communication.
A good communicator can make a lot of difficult topics interesting.
But a big part of the equation is the people you’ll be talking to, there are certain topics that are harder sells, but the pay off is huge if you can package them in a way that subverts expectations and hooks them.
Since I don’t understand exactly what kind of interesting you are looking for I find it hard to be more specific.
And you being the one giving the talk, I’d suggest you scan what smarter, more knowledgeable people than us are talking about for good pitches.
Reddit / Stackoverflow, podcasts (something like Radiolab perhaps?), Hacker News / Slashdot, pocket etc could all be good sources.
